This article introduces the canned food preservation methods and principles, the types of canned food and technology, etc. This is the first part of the "Canned Preservation Principle".
 

1. What is Canned Food?
The food is packed into a can container, removes some of the air in the container and seals the container, kill the microorganisms in the can container. The food in the can is no longer mixed with microorganisms from the outside and is spoiled. This food is called canned food. Canned foods such as vegetables, meat and fish.
Due to the vacuum in the can, coupled with scientific sterilization, canned foods can be stored at room temperature for 1-2 years without the addition of preservatives.


2. What are UHT and Aseptic Packaged Foods?
Ultra-high Temperature Instantaneous Sterilization: The food is heated to 135 to 150°C in a very short period of time, maintained at this temperature for 3 to 20 seconds, and then quickly dropped to room temperature. During this heating process, the nutrients in the food have not been damaged or rarely destroyed by heat, and the microorganisms are killed. At present, this technology is mainly used for the sterilization of liquid foods or liquid foods with small particles.
Aseptic Packaging: The sterilized food is sealed in a container in an aseptic environment, and the whole process is not contaminated by microorganisms.
Common UHT and aseptic packaged foods such as UHT milk or fruit juice with small fruit particles.

5.2 Classification of structures from cans - 2-piece Can and 3-piece can
2-piece can: A piece of metal sheet is punched into a canned container by punching machine, and a lid is added to make a two-piece can.
3-piece can: A can composed of a can body rolled from a sheet of metal, a single bottom lid and a single upper lid is called a three-piece can.

6. The structure of tinplate for food cans
The advantages of tinplate cans for food are:
(1) They have high hardness and will not be deformed even if there is a vacuum in the can.
(2) They can resist the pressure change in the can during heat sterilization.
(3) Easy to carry.
(4) The materials are environmentally friendly.
(5) Tinplate can resist corrosion after surface treatment.
