This article introduces the preservation principle of canned food and the sizes of various cans. This is the second part of "Canned Preservation Principle".
1. The imperial representation of can size
For example: 206/211/209×408. It means as follows:
Can lid diameter/can body diameter/bottom lid diameter×can height (calculated by outer diameter after rolling)
Generally there are three digits. Assume that the first digit is represented by A, and the second and third digits are represented by B. It can be calculated as:
The diameter of the can lid or can body = A + B÷16 The unit is inches. If you use millimeters as the unit of calculation, then
Diameter of can lid or can body = (A + B÷16)×25.4 mm

For example: 206/211/209×408. It is expressed in millimeters as:
Can lid diameter/can body diameter/bottom lid diameter×can height = 60.33/68.26/65.09×114.3 mm
2. Commonly used can sizes in China's canning industry

The following conditions need to be considered when choosing the can model and size
• The contents of the can are the raw materials of the food industry: For example, the ingredient tomato sauce, the ingredient used in the restaurant, and the amount is large. A large canned container should be used.
• The contents of the can are used for household consumption: For example, braised beef should consider the amount used up at one time by ordinary households. The canning container should be smaller.
• The shape of the contents: For the whole fish, it is more appropriate to use oval or rectangular cans.
• The heat transfer rate during canned sterilization.
